چکیده
Metabolomics studies have gained major importance in food applications. Quality control of food samples can be established on a large scale via state-of-the-art metabolic profiling based on statistical data evaluation. However, the metabolomics workflow puts high demands on an analytical system in terms of its robustness, dynamic range and identification capabilities. The Bruker compact QTOF System combines the robustness of Bruker orthogonalTime-of-Flight instruments with new 10-bit digitizer technology that allows for compound detection and identification across an unrivalled dynamic range.

The Effect of Coffee Extract on the Growth and Viability of Lactobacillus acidophilus and Bifidobacterium bifidum in Probiotic Milk and Yoghurt
The aim of this study was to determine the suitability of different doses (0, 0.4, 0.8 and 1.2%) of coffee extract on fermentation and survival of Lactobacillus acidophilus and Bifidobacterium bifidum in milk and yoghurt. The produced samples were examined in terms of pH, acidity and microbial count during incubation period and permanence. The number of Lactobacillus acidophilus and Bifidobacte...
متن کاملMetabolomic approach for discrimination of processed ginseng genus (Panax ginseng and Panax quinquefolius) using UPLC-QTOF MS
Discriminating between two herbal medicines (Panax ginseng and Panax quinquefolius), with similar chemical and physical properties but different therapeutic effects, is a very serious and difficult problem. Differentiation between two processed ginseng genera is even more difficult because the characteristics of their appearance are very similar. An ultraperformance liquid chromatography-quadru...
متن کاملMetabolic syndrome and different obesity phenotypes in the elderly women population: Iran’s Health System on aging
Background: Current literature has been focused on types of obesity with normal BMI (body mass index), but metabolically unhealthy. This study evaluates the prevalence of metabolical phenotypes of obesity. We also identified the best obesity index in predicting the components of metabolic syndrome (MetS). Methods: A cross-sectional study has been conducted on 164 women over 60 years. Anthropome...
متن کاملThe Stabilising and Chelating Effects of Green and Roasted Coffee Extracts
ABSTRACT: Oxidation might be regarded as one of the most important reaction in oils and fats. Prooxidants namely iron and copper intensify and catalyze the oxidation while the chelating agents might retard or delay this process. Citric acid, phosphoric acid, some of phenolic compounds and phospholipids are considered as the compounds that chelate the prooxidant metals and through this mechanism...
متن کاملHigh-Throughput Metabolic Profiling of Diverse Green Coffea arabica Beans Identified Tryptophan as a Universal Discrimination Factor for Immature Beans
The maturity of green coffee beans is the most influential determinant of the quality and flavor of the resultant coffee beverage. However, the chemical compounds that can be used to discriminate the maturity of the beans remain uncharacterized. We herein analyzed four distinct stages of maturity (immature, semi-mature, mature and overripe) of nine different varieties of green Coffea arabica be...
